DUNKELD, VICTORIA 27 September, 2017 – The first in a series of changes in the next two months at Royal Mail Hotel in Dunkeld, Royal Mail Hotel Wine Bar and the refurbished casual eatery Parker Street Project opened on Friday September 22, 2017 on the lead up to the opening of new restaurant Wickens at Royal Mail Hotel opening Saturday October 21, 2017.
Parker Street Project has doubled in size as part of the renovation. It now seats 50 people inside, and a further 20 outside. It also received a fresh fit out; pared back wood furnishings, high tables and a copper feature wall. The updated, shared plate menu aligns with Executive Chef Robin Wickens British background and the farm to fork philosophies followed by Wickens and his kitchen team at the Royal Mail Hotel.
“I’ve been able to curate the Parker Street Project menu with influences from my English background, as well as inspiration from the kitchen garden’ says Wickens. “There are a range of traditional breakfasts including pork black pudding, fried duck egg and HP sauce and the lunch and dinner menu also have some British flair.”
Both Royal Mail Hotel Wine Bar and Parker Street Project menus are designed in line with current produce flourishing in the Royal Mail Hotel kitchen garden; the largest working restaurant kitchen garden in Australia which produces over 400 edible plant species per year.
Other items on the Parker Street Project sharing style menu include: rabbit scotch egg, parsley salad cream, salt baked beetroots, sheep’s milk yoghurt, stout vinegar and Royal Mail Sirloin roasted over coals with black garlic butter.
Parker Street Project will also offer a $50.00 “Feed Me: menu, whilst Royal Mail Hotel Wine Bar will specialize in one handed bites and the building of platters with local olives, charcuterie, cheese, pickles and more – paired with a selection of wines by the glass from the Royal Mail Hotel Wine Cellar.
Parker Street Project’s opening hours are as follows:
Breakfast: 7.30 – 11:30am
Lunch – noon – 3pm
Dinner – 5.30pm – 9pm
Royal Mail Hotel Wine Bar will open daily from 3PM till late.
